Based on the traditional Japanese design for breaking down whole chickens. This honesuki features a 90/10 single bevel blade design with micarta and dyed stabilized wood composite handle. Perfect for detailed poultry tasks as as well as any general kitchen tasks with a little more finesse than a full size chef knife. Great for meats, vegetables, herbs etc... Satin finished AEBL steel strikes the perfect balance of toughness and hardness for edge stability and ease of sharpening.
